Not pancakes: restaurant zucchini appetizer for a penny
Zucchini is a versatile vegetable for preparing light and tasty dishes. They make an excellent cream soup, casserole, stew, pancakes, and rolls.
The cook shared a recipe for a delicious zucchini cake with tomatoes and cream cheese on Instagram.
Ingredients:
- Zucchini – 1 kg
- Eggs – 2 pcs
- Flour – 4 tbsp
- Salt
- Garlic – 4 cloves
- Cream cheese – 400 g
- Yogurt or cream – 100 g
- Greens
- Tomatoes – 2 pcs
Method of preparation:
1. Grate the zucchini. Partly on a fine and partly on a coarse grater. Add salt and mix. Leave for 10 minutes. Drain and squeeze out all the moisture. Add eggs, 2 chopped garlic cloves, and flour, and mix. The mass should be thick, like pancakes.
2. Put it in a hot frying pan. Spread over the surface and fry over medium heat on both sides until golden brown.
3. Mix the cream cheese with salt, herbs, and cream (or yogurt). Spread each zucchini pancake and top with thinly sliced tomatoes.
Put in the refrigerator for one hour!
