You can make pancakes not only from potatoes but also from zucchini. Juicy seasonal vegetables are perfect for this dish. They are also ideal for a hearty snack.

The idea of cooking zucchini pancakes for a hearty snack was published on the Instagram page of food blogger Ivanna Luts (ivankaluts). Serve them with sour cream.

Ingredients:

  • large zucchini - 1 pc.
  • medium carrot - 1 pc.
  • small onion - 1 pc.
  • garlic - 1 clove
  • eggs - 1 pc.
  • sour cream - 2-3 tbsp
  • greens - to taste (dill, parsley)
  • salt, pepper - to taste
  • hard cheese - 70-100 g
  • favorite spices - optional
  • starch - 1 tbsp
  • flour - 1-2 tbsp.

Method of preparation:

1. The zucchini should be young. If it is older, remove the middle.

2. Finely grate the peeled zucchini.

3. Grate the carrots and onions.

4. Squeeze the zucchini mass to remove juice.

5. Add the egg, finely chopped dill, parsley, garlic, and sour cream to the zucchini mass.

6. Mix everything.

7. Add grated cheese, starch and flour. Mix everything.

8. Spoon 1 tbsp of the zucchini mixture on a preheated frying pan with oil.

9. Fry until golden brown on both sides.

10. Place on paper towels to remove excess oil.

11. Serve with sour cream.
