Not just pancakes: how to make a diet cream soup from zucchini
There are a lot of cream soups: pumpkin, mushroom, cheese, cream. But since the zucchini season has begun, the list can be supplemented with another dish – zucchini cream soup. It has many advantages: dietary, healthy, budget, spicy and appetizing. In addition, it can be prepared based on any broth: meat or vegetable.
Food blogger Kateryna Kudliak (recepty_przepisy) shared a recipe for creamy zucchini soup on her Instagram page.
Ingredients:
- zucchini – 2 pcs
- carrots – 1 pc
- potatoes – 5 pcs
- broth – 2 liters
- garlic – 2-3 cloves
- butter – 30 g
- salt, pepper
Additionally:
- sour cream
- croutons
Method of preparation:
1. Cut the potatoes into cubes.
2. Cut the zucchini into cubes.
3. Cut the carrots into slices.
4. Mix all the chopped ingredients in a saucepan. Pour in the broth and put on the stove. Bring to a boil and cook for another 30-40 minutes.
5. Add garlic, salt and pepper.
6. Beat everything with an immersion blender until smooth.
7. Serve with sour cream and croutons.
