Zucchini is a great choice for a light summer salad. The vegetable is quite juicy and goes well with a variety of herbs. The dish is deliciously seasoned with simple oil.

The idea of preparing a summer salad with zucchini was published on the Instagram page of food blogger Tania Sheremet. The vegetables need to be fried a little in a frying pan.

Ingredients:

  • zucchini - 1 large or 2 small ones
  • tomatoes - 1 large
  • garlic - 3 cloves
  • eggs - 2 pcs.
  • herbs: dill, parsley
  • oil - 1 tbsp, as well as a small amount for frying
  • salt and pepper - to taste

Method of preparation:

1. Cut the zucchini into 4 pieces and cut into slices.

2. Fry in a little oil for 3-4 minutes (zucchini should be crispy).

3. Crack the eggs, shake, and pour over the zucchini.

4. Season with salt and pepper and stir.

5. Fry until the eggs are cooked.

6. Then add the chopped garlic.

7. Stir and transfer to a bowl, let it cool.

8. Meanwhile, chop the tomatoes and chop the dill.

9. Put it in the zucchini.

10. Add a tablespoon of oil.

11. If necessary, add salt and pepper to taste, and mix.
