If you make a Broken Glass Cake for every holiday and want to try something new, you should make a cheesecake with fruit jelly. This dish looks much more impressive and is very easy to prepare. The cheesecake does not require baking, and you can choose your favorite fruit and enjoy the unreal taste.

Ingredients for a 15-16 cm diameter mold

For the base:

  • shortbread cookies - 150 g
  • butter - 60 g

For the filling:

  • cottage cheese - 300 g
  • cream - 50 ml (10-33%)
  • 50 g butter - 50 g
  • sugar - 75 g
  • gelatin - 10 g
  • cold water - 40 ml
  • strawberries (or other fruits) - 200 g
  • strawberry jelly - 90 g
  • hot water - 400 ml

Preparation of cheesecake

Method of preparation:

1. Make the base: crush the cookies into crumbs, add the melted butter, and mix well.

2. Cover a springform pan with foil, and cling film on the sides.

3. Put the mass there and spread it evenly over the bottom.

4. Put the base in the refrigerator.

5. Prepare the filling: soak gelatin in cold water for 15 minutes, then melt in the microwave or on the stove.

6. Add soft butter, sugar, cream, and melted gelatin to the cottage cheese, and beat in a blender until smooth.

7. Put the whole mass on the cookie base in the mold, smooth, and put in the refrigerator to harden for 2-3 hours.

8. Jelly layer: chop the strawberries. Pour the jelly into hot water, and stir until dissolved and cool completely.

9. Put the fruit into the mold and pour the jelly over the filling.

10. Leave in the fridge overnight until completely set.
