Lecho is a delicious savory appetizer that is covered for the winter. Traditionally, it is made from a variety of vegetables: peppers, eggplants, zucchini, and tomatoes. But if you want to make a more substantial dish, you can choose mushrooms as the main ingredient.

Ingredients:
- champignons - 400 g
- bell pepper - 1.5 kg
- onion - 250 g
- tomato sauce - 500 ml
- salt - 1 tbsp.
- sugar - 0.5 cups
- ground pepper - 0.5 tsp.
- vinegar essence - 1 tsp.
- bay leaf - 1 pc.

Method of preparation:
1. Cut the onion into cubes and the mushrooms into slices. Fry together with oil until the liquid evaporates.

2. Peel the seeds from the bell pepper and cut into slices.
3. Combine the pepper with the mushrooms and onions. Add the tomato sauce.

4. Pour water, add sugar, salt, pepper and bay leaf. Bring to a boil. Simmer the lecho for 25 minutes. Add vinegar at the end.

5. Put the lecho in sterilized jars. Close, wrap in a towel, and leave to cool completely.
