Mochi – a new trendy Japanese dessert: cooking secrets from Hector Jimenez-Bravo
Japanese mochi dessert
Mochi is a Japanese rice cake made from white or glutinous rice. This dessert is very attractive, light and tasty and has already found its fans. Today, the FoodOboz editorial team shares the secrets of cooking a trendy dessert from Hector Jimenez-Bravo, which the chef shared on his Instagram page. The expert added that this is one of his favorite Asian desserts.
The main ingredient of mochi is rice flour
Ingredients:
- Powdered sugar - 200 g
- Water (or fruit juice, but then less sugar) - 200 g
- Rice flour - 100 g
- Strawberries or any other fruit - 100 g
- Cream cheese - 250 g
- Powdered sugar - 50 g
- Rosemary - 5 g
Method of preparation:
- Mix powdered sugar, water or juice and rice flour until smooth.
- Then there are 2 options: the first is to put it in a water bath and stir every two minutes until the dough thickens and becomes one piece; the second is to put the dough in the microwave for 1 minute intervals and stir all the time until you get the desired texture.
- Once the dough is ready, put it on a board very generously sprinkled with cornstarch.
- Roll out thin dough and cut into squares.
- For the filling, mix a little strawberry (or any other) puree, cream cheese and powdered sugar, and add finely chopped rosemary.
- Take a square of sliced dough, shake off the excess starch and put the filling in the middle, put a whole strawberry in it and wrap our future moti. Combine all the edges, pinch off the excess dough.
- Sprinkle the bottom of the dish with starch to prevent the moti from sticking, and you can eat or freeze it immediately.
