Light mushroom cream soup for a hearty dinner in 15 minutes
If you like mushrooms, namely champignons, which can be the main ingredient for preparing delicious dishes, such as soups and salads. They can easily make a delicious dinner option in just 10 minutes.
Chef Yevhen Klopotenko shared a recipe on his YouTube channel for a very satisfying, tasty, and easy-to-prepare mushroom puree soup that will be an ideal dinner option (to watch the video, scroll to the end).
Ingredients:
- champignons – 600 g
- onion – 200 g
- ground coriander – a pinch
- fresh basil – 2 sprigs
- sunflower oil – 1 tbsp
- any seeds – 1 tbsp
- salt, pepper – to taste
Method of preparation:
1. Cut the onion and mushrooms into small pieces.
2. Put into a hot frying pan with oil and fry until golden brown.
3. Season with salt and pepper and ground coriander, mix and transfer the mushrooms to a blender.
4. Pour in the milk and stir until smooth.
5. Add the remaining milk and blend again.
6. Pour the soup into a saucepan and cook over medium heat for 3-4 minutes.
Serve the dish with pumpkin seeds and basil leaves, it will be very tasty and satisfying.
