Lean Olivier salad with an unusual ingredient: how to cook in a new way
Olivier salad is one of the most popular dishes prepared in almost every family. If you are fasting, you can prepare it in a lean version by adding one unusual ingredient - squid. In general, the Olivier is quite versatile because the ingredients can be combined based on your own taste preferences. The main thing is to choose a lean dressing or sauce.
Food blogger Olha (olha.holovina) shared a recipe for a lean Olivier salad with squid on her Instagram page.
Ingredients:
- boiled potatoes - 4-5 pcs.
- pickled cucumber - 2 pcs
- fresh cucumber - 1 pc
- boiled carrots - 1 pc
- green onions - 30 g
- frozen squid - 300-400 g
- canned peas - 2/3 b
- salt
- lean mayonnaise
Method of preparation:
1. Peel and dice the potatoes and carrots.
2. Dice the cucumbers and chop the onion.
3. Boil the squid. Bring the water to a boil and cook 1-2 chopped rings at a time. Dip in salt water for 40-45 seconds and bring to a boil.
4. Cut the ready squid into pieces.
5. Combine all the ingredients. Season the salad with mayonnaise and salt.
