Kyiv cake: how to make a spectacular dessert at home

Exquisite, aesthetic and colorful - just like our Ukrainian capital - is the Kyiv cake. This dessert is based on airy sponge cakes and condensed milk cream. This is a dish that will complement any celebration and will definitely surprise your guests.

The idea for the Kyiv cake was published on the Instagram page of food blogger Tally Koroleva (tallykoroleva).

Ingredients for the sponge cake:

  • 5 large eggs, room temperature
  • 3/4 cup of sugar
  • 1 cup of flour

Ingredients for the meringue:

  • 6 egg whites
  • 1 +1/3 cups of sugar
  • 1 cup chopped hazelnuts
  • 2 cups raspberry jam or currant jam

Ingredients for the cream:

  • 6 egg yolks
  • 1/3 cup of water
  • 8 tbsp. raw condensed milk
  • 115 g of chocolate (bars or chocolate drops)
  • 400 g of butter, room temperature

Method of preparation:

1. Beat eggs with sugar for about 15 minutes. Add the sifted flour. Bake for 30 minutes at 180 degrees or until a toothpick comes out dry.

2. Prepare the meringue: beat the egg whites and sugar at high speed until fluffy. Carefully add the chopped hazelnuts. Mix with a spatula, not for long. Cover the mold with parchment. Bake at 120 degrees for 6 hours. The diameter of the mold is 28 cm.

3. Prepare the cream: whisk the egg yolks in a small saucepan. Add water and condensed milk, mix until smooth.

4. Cook all the ingredients over very low heat. Keep stirring the cream all the time to prevent it from sticking. Slowly increase the heat, but do not bring the mixture to a boil. Cook for about 5-10 minutes.

5. Remove the mixture from the heat and add the chocolate. Cool to room temperature.

6. In a separate bowl, beat the butter. When the butter is fluffy, add the custard mixture. Carefully, a few spoonfuls at a time.

7. Assemble the cake: using a serrated knife, cut the sponge cake horizontally in half. Cover each layer with jam, excluding the top layer.

8. Put the first layer of sponge cake and cover it with cream, then meringue, then another layer of cream.

9. After the cake is assembled, cover the sides with the remaining cream. Decorate to your liking.
