Juicy whole chicken in tangerine glaze: how to surprise your guests
If you have tried all the recipes for chicken and don't know how to serve it in a new way, bake it in spices and serve it with tangerine glaze. This method of cooking results in soft and juicy meat, as well as moderately crispy and sweet and sour skin.
The recipe for chicken in tangerine glaze was shared by chef Valeriy Ponomar on Instagram.
Ingredients:
- chicken - 2 kg
- black pepper - 1 tsp
- salt - 1 tsp
- paprika - 1 tsp
- garlic - 4 cloves
- olive oil - 3 tbsp
- Provence herbs - 1 tsp
- ground chili pepper
For the glaze:
- tangerines - 6 pcs
- sugar - 6 tsp
- cinnamon - 1 stick
- star anise - 1 pc
- cloves - 2 pcs
- dried ginger - 1 tsp
Method of preparation:
1. Mix the spices: black pepper, salt, paprika, Provence herbs and chili pepper. Squeeze the garlic and add olive oil.
2. Rub the chicken inside and out with the resulting mass. Bake at 180 degrees for 2.5 hours.
3. Meanwhile, prepare the glaze: squeeze the tangerine juice into a saucepan and add the rest of the spices. Cook until thickened.
4. Coat the hot chicken with the glaze and bake for a few more minutes until the skin is golden brown.
