Thickened cherries are often used as a filling for various pies, pancakes and casseroles. To achieve the desired consistency, starch is usually used, but it can turn into lumps when heated. Therefore, professional confectioners often use a method without heat treatment.

Food blogger Olena Romanova (olena_romanova_) shared her proven method of thickening cherries on Instagram. It turns out to be much tastier than with starch.

Ingredients:

  • cherries - 1 kg.
  • sugar - 500 g
  • thickener - 110-150 g (you can add more - it all depends on the manufacturer)

Method of preparation:

1. Pour the cherries into a saucepan.

2. Add sugar.

3. Add the thickener.

4. Add the thickener.

5. Stir until thickened.

This is a thickener for cream or sour cream. In "everything for confectioners" stores, it is called "berry thickener".

This method is often used by bakeries and confectioneries. You can buy this thickener in supermarkets or in specialized stores. The thickener contains modified starch and powdered sugar. The density can be adjusted during the cooking process.

Can be used for:

  • pies
  • cakes
  • casseroles
  • pancakes
