How to cook:

  1. First of all, separate the fillet from the skin with a sharp knife, and remove all bones with tweezers.
  2. Cut off the thin edge of the fish, it is more suitable for minced meat.
  3. Wash the orange, grate the zest, put it in a bowl, add salt, sugar, pepper, and mix thoroughly.
  4. Put the fish in a dish suitable for salting, rub it with vodka, which will make the fish elastic, and generously spread the zest and seasonings on both sides.
  5. Cut the orange into thin slices.
  6. Put cling film on the table, and lay out the orange so that it forms a pillow for the fish. Put the dill, fish, dill, and orange on top.
  7. Wrap tightly in plastic wrap and refrigerate for 12 hours.

You can eat the fish immediately.
