Ingredients:
- hake or other white fish fillet - 500-700 g
- oil for frying
- tomatoes - 150 g
- tomato oil - 200 g
- olives - 100 g
- garlic - 3 cloves
- basil
- dry white wine - 100 ml or juice of 1 lemon
- salt, pepper - to taste
Method of preparation:
1. Cut the tomatoes and olives.
2. For tomato puree, grate 1-2 large tomatoes or take ready-made.
3. Thinly chop the garlic.
4. Cut the fillet into pieces lengthwise.
5. Season with salt and pepper on both sides.
6. Heat oil in a frying pan and turn on high heat.
7. When it is well heated, put the fillets and fry on one side for 2-3 minutes.
8. Remove the fish from the pan and add the tomatoes, tomato puree, olives and garlic.
9. Simmer under the lid for a few minutes. Add wine or lemon juice, salt/pepper to taste.
10. Cook the sauce for 3-4 minutes, then add the basil (optional) and cook for a few more minutes.
11. Return the fish fillets to the frying pan and let them stew a little in the sauce.
