Okroshka is a cold and truly refreshing first course cooked with ready-made products and fresh vegetables. In addition, is can be based on yogurt, sour cream, or kvass.
On her Instagram page, food blogger Anna (treanna_food) shared a recipe for a delicious and budget-friendly water-based okroshka.
Water-based okroshka recipe
Ingredients:
- boiled potatoes - 200 g
- boiled eggs - 4 pcs
- fresh cucumbers - 200 g
- boiled sausage - 250 g
- green onions - 1 bunch
Ingredients for the dish
- dill - 1 bunch
- 30% sour cream - 350 g
- 15% mayonnaise - 150 g
- water - 3 liters
- salt - 1 tbsp
- citric acid - 1 tsp.
Kefir-based okroshka
Method of preparation:
1. Cut potatoes, eggs, cucumbers, and sausage into cubes.
2. Chop the dill and onion.

3. Mix all the prepared ingredients in a saucepan.
4. Add sour cream, mayonnaise, salt and citric acid. Stir to combine.
