How to pickle zucchini for the winter: recipe for a simple salad
Zucchini is a budget-friendly and healthy seasonal summer vegetable. Therefore, in addition to a variety of casseroles, pancakes and rolls, it is worth making versatile winter preparations from this product. It is a great addition to meat, fish or just porridge - very nutritious and low in calories.
The idea of preparing delicious zucchini salad for the winter was published on the Instagram page of food blogger Maryna (marisha_recepti).
Ingredients:
- zucchini - 2,400 kg
- onions - 4 pcs.
- carrots - 2 pcs.
- sweet pepper - 3 pcs.
- hot chili pepper - a quarter
- garlic - 10 cloves
- tomatoes - 2 kg
- 9% vinegar - 100 ml
- sugar - 180 g
- salt - 2 tbsp
- vegetable oil - 160 ml
Method of preparation:
1. Cut the zucchini into cubes and onions into rings and grate the carrots.
2. Pass the tomatoes through a meat grinder. You should get 1.600 liters of juice.
3. Pass the sweet pepper and chili pepper through a meat grinder too.
4. Fry the onion in vegetable oil until soft. Add the carrots and fry together.
5. Add tomato juice, sweet and chili pepper, fried onions and carrots, half the garlic, salt, and sugar to the saucepan. Stir and boil for 10 minutes.
6. Add zucchini and boil for 25-30 minutes until zucchini is tender. Add the rest of the garlic and vinegar.
7. Stir, put into sterile jars and tighten with sterile lids.
8. Turn over and wrap in a blanket.
