Ingredients:
- Plums - 4 kg
- Water - 4 liters
- Sugar - 300 g
- Vinegar - 1.25 cups
- Cloves - 15
- Cinnamon - 0.5 tsp.
Method of preparation:
- Wash the plums, be sure to pierce in several places so that they do not burst during cooking.
- Prepare sterile jars in advance, and put the prepared plums in them.
- Marinade: add sugar, cloves, and cinnamon to the water, boil until boiling, add vinegar at the very end, and pour the hot marinade into the jars.
- Preserve and turn the jars upside down, wrap them in a towel, and leave to cool completely, then transfer to a dark, cool place.
2. Spicy pickled plums
Ingredients:
- Plums - 4 kg
- Sugar - 1.5 kg
- Vinegar - 500 ml
- Bay leaf - 10 pcs.
- Peppercorns - 10 pcs.
Method of preparation:
- Wash the plums well, and put them in a bowl.
- Marinade: Pour vinegar into a small saucepan, add sugar, bay leaf, and peppercorns, and cook until boiling, be sure to stir.
- Pour the hot marinade over the plums, cover with a lid or a large plate so that you can put a press on it, and leave them for 12 hours.
- After that, drain the marinade from the plums, add the peppercorns and bay leaf to it again, bring to a boil, and pour hot over the plums. This procedure should be repeated for another 4 days.
- On the sixth day, prepare the jars in advance, be sure to sterilize them, and boil the lids.
- Put the plums in the jars, put a bay leaf, and peppercorns on the bottom of each one, and make a fresh marinade again.
- Pour the boiling marinade over the plums in the jars and pickle them.
- Be sure to turn them upside down, wrap them in a towel or blanket, and leave them to cool completely.
