How to make zucchini roll: a budget dish idea for the whole family

Zucchini season is in full swing. The vegetable is very budget-friendly, so it's worth preparing a variety of dishes from it: pancakes, casseroles, salads. It's also a great idea to make a full-fledged roll out of this product. It is quite satisfying and contains very simple ingredients.

The idea of making a hearty zucchini roll was published on the Instagram page of food blogger Yulia Simonchuk (cook_julija_simonchuk).

Ingredients:

  • zucchini - 500 g
  • eggs - 3 pcs
  • flour - 4 tbsp
  • sour cream - 2 tbsp
  • salt - to taste

Ingredients for the filling:

  • cream cheese - 180 g
  • sour cream - 2-3 tbsp
  • garlic - 2-3 cloves
  • salt, pepper, herbs - to taste
  • tomatoes - 2 pcs
  • cucumber - 1 pc

Method of preparation:

1. For the filling, mix all the ingredients, chop the tomatoes and cucumber.

2. Grate the zucchini, salt, mix, and set aside for 10 minutes.

3. Squeeze out the excess liquid.

4. Add eggs, sour cream, flour, salt, and mix.

5. Put it on a baking sheet covered with siliconized parchment (or grease it with vegetable oil), spread it evenly, and bake at 180 degrees for 20-30 minutes.

6. Let it cool, turn it over, put the curd mass and filling, roll it up, wrap it in cling film, and place it in the refrigerator for several hours. Cut into portions.
