Classic charlotte is made with apples. But in summer, it can also be made with zucchini. The pastry is very hearty and flavorful, and it is also dietary.

The idea of making diet zucchini charlotte was posted on the Instagram page of fitness trainer Oleksandr (pashkovskiy_coach__poznyaki).

Ingredients for the filling:

  • zucchini - 1 pc.
  • lemon - 0.5 pcs
  • cinnamon
  • stevia

Ingredients for the dough:

  • almond flour - 70-90 g
  • eggs - 4 pcs
  • sour cream - 100 g
  • baking powder - 1 tsp

  • vanilla - to taste
  • salt - a pinch
  • butter - 40 g

Method of preparation of the filling:

1. Cut the zucchini into rings, pour lemon juice over, add cinnamon and stevia to taste and leave for 20 minutes.

1. Add the egg yolks, psyllium, baking powder, sour cream, vanilla and beaten egg whites to flour.

2. Pour one layer of batter on a greased parchment and then add zucchini. Repeat several times.

3. Bake in a preheated oven at 180 degrees for 40-60 minutes.
