How to make thin and tender pancakes: we share the perfect technology
Typically, pancakes are made with milk, water, or whey. And the texture, depending on the chosen ingredients, is completely different. However, to make the dough fluffy and the finished products thin and tender, it is worth combining several ingredients at once, such as water and milk.
The idea of making delicate pancakes was published on the Instagram page of food blogger Tetiana Koval (koval_tanichka).
Ingredients for the dough:
- milk – 250 ml
- water – 250 ml
- salt – 1/2 tsp
- sugar – 1/2 tsp
- vegetable oil – 4 tbsp
- eggs – 3 pcs
- flour – 200 g
Ingredients for the filling:
- cottage cheese – 600 g
- sour cream – 2 tbsp
- sugar (for cottage cheese) – 4 tbsp
- vanilla sugar – 20 g
- currants – 300 g
Method of preparation:
1. Beat the currants with a blender, add sugar, and cook for 5 minutes after boiling.
2. Mash the cottage cheese with a fork, add vanilla sugar, sour cream, and sugar.
3. Beat eggs with warm water, milk, salt, sugar and oil. Gradually add flour, stirring constantly.
4. Bake pancakes on a hot, dry frying pan.
5. Put the cottage cheese and currant filling on the finished pancake, fold the two edges inward, and roll the pancake.
