How to make the perfect pancake dough and how to fry them properly: secrets from Yevhen Klopotenko
On February 28, a very colorful holiday week begins in Ukraine, which has several names: Maslenitsa, Cheese Week, and Pancake Week. The main dish of the holiday is certainly pancakes.
They are prepared with all possible, original and tasty fillings, from salty ones - fish, meat, cabbage, cheese, greens - to sweet ones: cherries, cottage cheese, berries, poppy seeds, raisins, apples. But the most important thing in making them is to make a good dough.
On his YouTube channel, chef Yevhen Klopotenko shared a recipe for the perfect dough for pancakes, which will be very tasty, flavorful, and not torn.
The chef's tip: strain the finished dough through a sieve to get rid of all the lumps. Also, make the dough liquid rather than thick, and be sure to let it brew. Do not add a lot of oil to the dough, especially when frying.
The recipe for the perfect dough for delicious pancakes
Ingredients:
- flour - 130 g
- milk - 340 ml
- eggs - 2 pcs.
- sunflower oil - 2 tbsp.
- sugar - 2 tbsp
- salt - a pinch
Method of preparation:
1. Mix the eggs, sugar, salt and oil, mix with a whisk until smooth.
2. Sift the flour, preferably twice.
3. Add the flour to the egg mixture and mix well.
4. Then pour the milk into the dough and mix well again.
5. Heat a frying pan and pour the batter in small portions, fry for about 1 minute.
6. Brush the finished pancakes with butter.
How to fry pancakes correctly:
1. Pour 1 ladle of dough into a preheated frying pan, be sure to turn up the heat, and after a few seconds reduce it to medium again and continue frying.
2. Turn the pancakes over when bubbles appear on the surface and fry on the second side for about 30 seconds.
