How to cook Odesa-style eggplant caviar.
Ingredients:
- eggplant - 3 pcs
- tomatoes, preferably Mikado - 1 pc
- onion - 2 pcs
- garlic - 2-3 cloves
- parsley - 1/2 bunch
- salt - to taste
Method of preparation:
- Wash the eggplants and prick them with a fork so that they do not "explode".
- Bake at 200 C, but it's better to grill them as it will give them a nice flavor.
- Bake the tomatoes and onions in the oven after the eggplants so that the rough skin comes off well.
- Put the finished eggplant on a board and let it cool.
- Then chop the eggplant, tomatoes, and onions very finely.
- Add the chopped garlic and chop everything well again with a knife to get a smooth consistency.
- At the very end, add the herbs and salt to taste.
This caviar can be eaten immediately with fresh bread or homemade dried croutons.
Ready-made dish.
