Polish apple pie is a mix of charlotte and grated pie at the same time. The delicate apple filling and airy meringue perfectly harmonize in the pastry. It is based on a simple shortcrust pastry. This is a very successful apple pastry that make you fall in love with it from the first bite.

Ingredients:

  • sifted flour - 160 g
  • egg yolks - 4 pcs
  • butter - 180 g
  • baking powder - 1.5 tsp.

The filling:

  • apples - 1 kg
  • sugar - 100 g
  • juice of 1/2 lemon

  • whites - 4 pcs
  • sugar - 180 g

Method of preparation:

1. Let's start with the preparation of the dough. Separate four eggs into whites and yolks. Put the whites in the refrigerator and whisk the yolks with melted butter until smooth.

2. Add flour to the resulting mass and knead a soft dough. Put 1/4 part in the freezer and the rest in the refrigerator.

3. Meanwhile, prepare the filling. Peel and grate the apples on a coarse grater. Mix them with sugar and lemon juice in a saucepan. Put on the fire and cook into a puree. Then let it cool.

4. While the apple mass is cooling, prepare the meringue. To do this, whip the whites until thick foamy, then add sugar and beat until stiff peaks form.

5. At this stage, you need to form the pie. Roll out the dough that was in the refrigerator thinly and put it on the bottom of the mold, forming the sides.

6. Put the filling and grate some of the dough that was in the freezer.

8. Bake at 180 degrees for 40-50 minutes.
