How to make fluffy muffins from zucchini: a very easy way to use a vegetable

If you think you've cooked all the possible dishes with zucchini, you're wrong. It's such a versatile vegetable that you can even make muffins out of it. The products are very fluffy, perfect for a hearty snack.

The idea of making fluffy zucchini muffins was published on the Instagram page of food blogger Kateryna with the nickname kathycoooks. Don't forget to add the baking powder.

Ingredients:

  • large zucchini – 1 pc
  • tomato – 1 pc
  • sausages – 2 pcs
  • bacon – 2-3 slices
  • sweet pepper – 1/2 pc
  • egg – 1 pc
  • flour – 3 tbsp
  • spices – to taste
  • baking powder – 1/2 tsp
  • cottage cheese – 100 g

Method of preparation:

1. Grate the zucchini on a coarse grater and squeeze out the juice well.

2. Finely chop the sausages, bacon and vegetables.

3. Add to the zucchini.

4. Beat the egg and add the spices.

5. Add flour and baking powder, and mix well.

6. Put the mixture into the silicone muffin tins and add a little cheese on top of each.

7. Put the muffins in the oven and cook for 20 minutes.
