How to make delicious cold borscht: 2 easy ways

On hot days, light salads, cold soups like okroshka, and berry pies are the best lunch and even dinner. Moreover, these dishes are very easy to prepare.

1. With sour cream

Borscht with sour cream.

Ingredients:

  • potatoes - 150 g
  • chicken broth - 500 ml
  • beetroot - 150 g
  • onions - 100 g
  • lemon - ½
  • tomato paste - 15 g
  • parsley - 10 g
  • dill - 10 g
  • sour cream - 45 g
  • sunflower oil - 30 ml
  • garlic - 1-2 cloves
  • salt, pepper - to taste

Method of preparation:

  1. Wash and peel the potatoes. Cut them into large cubes and cook in the prepared chicken broth for 15 minutes.
  2. Peel the onion and cut into small cubes. Grate the carrots and beets.
  3. Put the onion in a frying pan and fry until golden brown. Then add the beets and carrots and stew well over low heat for about 3-5 minutes.
  4. Then add the tomato paste, grated garlic, lemon juice, salt, and pepper, mix everything thoroughly and add to the potatoes. Bring to a boil and cook for another 10 minutes.
  5. Chop the herbs and add them at the very end.

Serve the dish hot and with sour cream.

2. Country-style

Cold borscht.

Ingredients:

  • cold boiled water - 300 ml
  • beets - 1-2 pcs
  • eggs - 1-2 pcs
  • cucumbers - 2 pcs
  • sour cream - 2-3 tbsp
  • horseradish - 1 tsp
  • green onions, parsley, dill - 30 g each
  • lemon - 1 pc
  • salt, pepper - to taste

Method of preparation:

  1. Boil the beets and eggs. Peel and grate them on a coarse grater.
  2. Peel the cucumbers and grate them as well.
  3. Finely chop the herbs.
  4. Grate the horseradish.
  5. Mix all the ingredients, cover with water, add sour cream, salt and pepper and mix thoroughly.
  6. Add lemon juice.

Before serving, cut a boiled egg and add it to each plate. Pour the borscht on top and sprinkle with herbs.
