How to make a delicious restaurant dish from salmon and quince: secrets and recipe from the chef. Exclusive
If you want to cook a gourmet meal from simple ingredients at home, it is absolutely possible to do so. You just need to choose the right products, which should include fish, such as salmon, as well as light vegetables such as cabbage, cucumbers, avocados, and lemon juice and spices.
The finalist of the Hell's Kitchen reality TV show, culinary expert Oleksandr Hromliuk, shared with FoodOboz an exclusive recipe for a delicious salad of salmon, avocado, cucumber, and cabbage, which will be given a special flavor by an original quince and spice sauce.
- Fresh salmon diced 1.5x1.5 - 100 g
- Lemon juice - 5 g
- Savoy cabbage - 40 g
- Brussels sprouts - 30 g
- Avocado - 30 g
- Roasted sesame seeds - 1/2 tbsp
- Chuka seaweed - 30 g
- Cucumber - 40 g
- Salt - to taste
Sauce:
- Quince - 200 g
- Water - 1.2 liters
- Sugar - to taste
- Salt - to taste
- Cloves, cardamom, cinnamon, star anise - to taste
- Balsamic vinegar or cream - to taste
Method of preparation:
1. Cut fresh salmon into cubes, add lemon juice, and salt, mix, and leave it for a few minutes to "cook" under the acid.
2. Blanch the Brussels sprouts in salted water and immediately put them on ice to prevent them from becoming bitter and to keep them crisp.
3. Cut the Savoy cabbage into strips or cubes.
4. Dice the avocado and cucumber.
5. Quince sauce: peel and chop the quince, and put it in water in a ratio of 1:6. Add some cloves, cardamom, cinnamon, and star anise. Cook until the quince turns pink.
6. Put the quince in a blender, add a little liquid in which it was cooked, and blend until smooth.
7. Then add a little balsamic vinegar or cream to the finished mixture and mix. The sauce will be very tender and smooth.
8. Assemble the salad: put the vegetables, fish, add the seaweed, pour the delicious sauce over the salad, and sprinkle the sesame seeds on top.
