How to make a delicious and juicy carrot cake: add orange sauce

Juicy and young carrots are perfect for making a delicious cake for tea. It will turn out moderately sweet and very fluffy. It is very tasty to pour a fragrant orange sauce on top of the pastry.

Ingredients for the cake:

  • grated carrots - 300 g
  • sugar - 200 g
  • eggs - 4 pcs.
  • flour - 200 g
  • leavening agent - 1 tsp.
  • ground cardamom - 1 tsp.
  • cinnamon - 1 tsp.
  • walnuts - 100 g (optional)

Ingredients for the sauce:

  • orange juice - 200 ml.
  • honey - 2 tbsp.
  • dried lavender - 1 tsp.
  • cornstarch - 1 tbsp.
  • water - 1 tbsp.

Cake preparation method:

1. Preheat the oven to 180 degrees.

2. Grease a baking dish and cover the bottom with baking paper.

3. In a large bowl, beat eggs and sugar well into a foam.

4. In another bowl, mix the flour, cinnamon and cardamom.

5. Gradually add this mixture to the egg mixture and mix until smooth.

6. Add grated carrots and nuts (if using), mix.

7. Pour the batter into the mold and bake for about 40-45 minutes, until the cake is golden and passes the dry toothpick test. Allow to cool.

8. For the sauce, combine the orange juice, honey and dried lavender in a small saucepan. Bring to a boil over medium heat.

9. In a small bowl, dissolve cornstarch in water and add to boiling juice, stirring constantly until thickened.

10. Remove from heat and allow to cool slightly.

11. Pour the cake with sauce and decorate with fruit or berries.
