How to make a chocolate cupcake with apricots: a quick version of a seasonal dessert
Apricots are not only the basis for making sweet jam but also a great addition to a delicate chocolate cake. A dessert with this filling is prepared as quickly as possible and will work even for beginners. A great option for a family tea party.
The idea of making a sweet apricot cake was published on the Instagram page of food blogger Iryna Boichuk (irina_boichuk_29).
Ingredients:
- apricots - 6-7 pcs.
- sour cream - 200 grams
- butter - 180 grams
- eggs - 3 pcs
- sugar - 200 grams
- flour - 250 g
- baking powder - 1 tsp.
- vanilla sugar - 2 sachets
- milk chocolate
- cream - 30 g
Method of preparation:
1. Wash the apricots and cut into pieces.
2. In a bowl combine the butter, vanilla sugar, and regular sugar, beat with a mixer until smooth.
3. Add the eggs one at a time and mix thoroughly.
4. Add sour cream and mix thoroughly with a mixer.
5. Add the sifted flour and baking powder and mix well.
6. Grease a muffin tin with vegetable oil and pour 1/3 of the batter.
7. Put the apricots in a single layer.
8. Then put the second layer of dough and apricots again.
9. The last layer of dough.
10. Bake in the oven at 180-200 degrees for 50 minutes.
11. After baking, remove the cupcake from the mold and let it cool for 15 minutes.
12. Turn it out onto a plate.
13. Make the fondant.
14. Break the milk chocolate bar into a bowl and add 30 grams of cream.
15. Put it in the microwave for 30 seconds, take it out, and stir it two or three times – until the fondant becomes a homogeneous consistency, like thick sour cream.
