- A large amount of starch interferes with the formation of a crispy crust, so the vegetable should be placed in cold water for 40-60 minutes.
- Then the liquid should be drained, and the product should be dried with a paper or taconite towel. If wet potatoes are thrown into heated oil, the fat will splatter actively - there is a risk of burns.
- There should be enough oil in the frying pan so that the potatoes are completely immersed. Also, the oil should be preheated for several minutes in a dry frying pan. It is better to use a non-stick pan.
- Do not put the entire amount of chopped vegetable in the pan at once. It is better to put it in small portions so that it is enough to cover the bottom.
- Do not cover the potatoes during cooking, add salt, pepper, and seasonings after the crust has formed.
- To avoid excess fat, remove the potatoes from the oil with a slotted spoon.
