A healthy, tasty, easy-to-prepare salad made from healthy vegetables - Vinaigrette, based on baked or boiled vegetables. To give the salad an original flavor, you can add pickled mushrooms, cucumbers, mustard, and peas.

Vinaigrette without mayonnaise

Chef Valentyna Saienko shared a recipe for a delicious and original "Vinaigrette" with pickled mushrooms, horseradish and peas on Instagram.

Salad recipe

Ingredients:

  • Beets - 3 pcs.
  • Potatoes - 1 pc.
  • Carrots - 1 pc.
  • Onion - 0.5 small
  • Fresh peas - 80 g
  • Pickled cucumbers - 5-6 pcs.
  • Marinated mushrooms - 150 g

Sauce:

  • Homemade oil - 4-6 tbsp.
  • Balsamic vinegar - 0.5 tbsp
  • Grain mustard - 1 tbsp.
  • Horseradish - 0.5 tbsp.
  • Garlic - 3-5 cloves.
  • Salt, pepper - to taste

Method of preparation:

1. Boil or bake the vegetables, peel and cut into small cubes.

2. Cut the mushrooms in half, dice the onion into small cubes; it can be pickled to avoid bitterness.

3. Sauce: mix mustard, horseradish, vinegar, oil, grated garlic, salt, spices and mix well.
