1. Marinade
Pomegranate juice and orange juice - these two juices soften the meat very well, they will fill it with a new flavor and at the same time preserve its juiciness.
2. Vacuum
"A slider bag is ideal for this. They are airtight and very comfortable to store in the refrigerator," the chef said.
3. Add salt at the end
When frying meat, you should add salt at the very end. Then there will be a clean taste of meat, slightly salted around the edges.
"It's the same with steaks, you add salt at the end when serving," explained Hector.
Meat ribs according to Hector Jimenez-Bravo's recipe
Ingredients:
- ribs - 1 kg
- spice mix - a handful
- sauce BBQ SAUCE
- green onions
1. Wash the ribs well, and peel off the film on the inside.
2. Mix the marinade in one container, roll the prepared ribs well and brush with the mixture, and send them to marinate for 12-24 hours in the refrigerator.
3. If you have several strips of ribs, wrap each one separately in strong foil so that the fat does not leak out and all the juices remain inside.
4. Bake in the oven at 180 C for 1.5-2 hours.
Serve the finished dish hot, with a good quality BBQ sauce, and sprinkle with green onions.
