How to cook citrus kurd: tips from Liza Hlinska

If you want to make a delicious, very delicate, and flavorful cream for cakes, the best option is a Kurd. It should be made from citrus fruits, so it will have an even richer flavor and a very pleasant aroma.

Custard
Ingredients:
- sugar - 100 g
- eggs - 150 g
- butter - 150 g
- orange juice - 50 ml
- lime juice - 20 ml
- lime zest - 1 tsp.
- orange zest - 1 tsp.
- grapefruit juice - 50 ml
- grapefruit zest - 1 tsp.
Method of preparation:
- First of all, wash the grapefruit, orange, lemon and lime. It is best to scald them with boiling water.
- Grate the zest from all the fruits and squeeze the juice out of them.
- Pour the freshly squeezed fresh juices into a saucepan, add the zest, bring to a boil, and turn off.
- In a separate bowl, mix the eggs with sugar and add to the saucepan, stir thoroughly and quickly to prevent the eggs from curdling.
- Put the saucepan on the fire and bring to a boil, stirring everything thoroughly.
- Turn off the heat and add the butter to the mixture, grind everything thoroughly until smooth with an immersion blender.
- Pour the finished kurd into a suitable container so that you can close it on top, cool it, and refrigerate it for 5-8 hours.
