How to cook citrus kurd: tips from Liza Hlinska

If you want to make a delicious, very delicate, and flavorful cream for cakes, the best option is a Kurd. It should be made from citrus fruits, so it will have an even richer flavor and a very pleasant aroma.

MastreChef judge and pastry chef Liza Hlinska shared a very simple recipe for citrus kurd on her YouTube channel, which will give any cake a completely new, exquisite taste and incredible aroma (to watch the video, scroll to the end).

Custard

Ingredients:

  • sugar - 100 g
  • eggs - 150 g
  • butter - 150 g
  • orange juice - 50 ml
  • lime juice - 20 ml
  • lime zest - 1 tsp.
  • orange zest - 1 tsp.
  • grapefruit juice - 50 ml
  • grapefruit zest - 1 tsp.

Method of preparation:

  1. First of all, wash the grapefruit, orange, lemon and lime. It is best to scald them with boiling water.
  2. Grate the zest from all the fruits and squeeze the juice out of them.
  3. Pour the freshly squeezed fresh juices into a saucepan, add the zest, bring to a boil, and turn off.
  4. In a separate bowl, mix the eggs with sugar and add to the saucepan, stir thoroughly and quickly to prevent the eggs from curdling.
  5. Put the saucepan on the fire and bring to a boil, stirring everything thoroughly.
  6. Turn off the heat and add the butter to the mixture, grind everything thoroughly until smooth with an immersion blender.
  7. Pour the finished kurd into a suitable container so that you can close it on top, cool it, and refrigerate it for 5-8 hours.
