Rumor has it that in the fall, you shouldn't overload your body with food that is difficult to digest. During the cold season, it especially needs more vitamins and nutrients. Therefore, you should give preference to something light and nutritious at the same time. An example of such a dish is sweet potato soup.
Chef Ruslan Sorochynskyi shared his recipe for autumn sweet potato soup. It was published on his Instagram page.
Ingredients:
- Sweet potatoes – 400 g
- Onion – 200 g
- White wine – 200 ml
- Cream – 300 ml
- Vegetable broth – 300 ml
- Olive oil – 50 ml
- Spices
- Cumin
- Rosemary
- Garlic
Sweet potatoes need to be baked with spices beforehand
Method of preparation:
- Peel the sweet potato. Wrap in foil with spices, garlic, cumin and rosemary. Bake for 40 minutes at 200 degrees.
- Fry the onion.
- Remove the flesh from the cooked sweet potato, you won't need it anymore. Blend the rest of the vegetables in a blender with onions, wine, broth, and cream.
- Add spices or other additives to your liking.
Use a blender to whip the sweet potato with the rest of the ingredients
