How to cook airy pancakes with kefir

If you want to make delicious pancakes, all you need to do is make good batter of flour and kefir, milk, or even water. You can serve them with sour cream, any jam, or condensed milk.
Chef Yevhen Klopotenko shared a recipe for delicious and airy kefir pancakes, which take no more than 10 minutes to cook, on his YouTube channel (to watch the video, scroll to the end).
Ingredients:
Batter:
- kefir - 300 ml

- egg - 1 pc.
- sugar - 1 tbsp
- vanilla sugar - 10 g

- flour - 200 g
- baking soda - 1/2 h . л.
- salt - a pinch
For the jam:
- apricots - 500 g
- sugar - 250 g
- walnuts 50-75 g
Method of preparation:
1. Pour 300 ml of 2.5% kefir into a deep bowl and add egg. Mix well.
2. Add salt, sugar, vanilla sugar, and baking soda and mix well.
3. Sift the flour through and add to all the ingredients. Mix well to avoid lumps.
4. Cover the bowl with cling film and leave for 25-30 minutes.
5. For the jam, cut the apricots in half, put them in a saucepan and cover with sugar. Add chopped nuts and cook for 20 minutes over medium heat, uncovered. Stir occasionally to prevent the jam from burning.
6. Heat a frying pan, add vegetable oil, and fry the pancakes on each side until golden brown for 1 minute.
7. Put them on a paper towel to absorb all the excess oil.
Serve with apricot jam.
