If you want to make a very fluffy and tasty sponge cake, it is important to prepare the batter correctly. For this, you will need only 4 eggs, always at room temperature.

Ingredients:
- strawberry puree - 100 g
- eggs - 4 pcs (room temperature)
- sugar - 220 g
- flour - 220 g
- 3,2% milk - 80 g
- butter - 60 g
- baking powder - 10 g
- salt - a pinch
- vanilla extract - 5 drops (optional)
Method of preparation:
1. Preheat the oven to 180°C.
2. Beat the eggs at a low mixer speed for 30 seconds. Gradually add sugar and beat again for 10 minutes until thick, fluffy, light mass. Add vanilla extract while whisking.
3. Rub the strawberry puree through a sieve.
4. Sift flour and mix thoroughly with baking powder and salt with a whisk. Add butter to milk and bring to a boil over low heat.
5. Sift the prepared dry ingredients into the beaten egg mass and mix gently with a spatula from the bottom up. Add the warm strawberry puree and mix gently again. Add the hot milk and butter in two stages and mix one more time.
6. Pour the batter into the prepared mold and bake for 40-45 minutes. Remove the finished sponge cake from the oven and leave to cool. Remove the mold, wrap the cake in cling film and put it in the refrigerator overnight to stabilize.
