Baklava according to the recipe of Yevhen Klopotenko, which he shared on his YouTube channel
Ingredients:
- Filo dough - 450 g
- Walnuts - 450 g
- Ground cinnamon - 1/2 tsp.
- Salt - 1/4 tsp
- Butter - 200 g
For the syrup:
- Sugar - 200 g
- Water - 200 ml
- Honey - 200 g
- Lemon juice - 1 tbsp.
- Cinnamon stick - 2 pcs.
- Lemon zest - 1/2 pc.
- Cardamom - 4 pcs.
- Cloves - 1 pc.
Method of preparation:
- Melt the butter in a saucepan, you will need to grease the phyllo dough sheets with it.
- For the syrup, combine sugar and water in a saucepan. Add the honey.
- Pour in the lemon juice. Then add the spices: cinnamon, cardamom, and cloves.
- Cook the syrup for 7-8 minutes over low heat, stirring occasionally until the sugar dissolves. As soon as bubbles begin to form, remove from heat.
- Chop the nuts. Mix them with cinnamon and salt.
- Put a layer of dough on a baking sheet. Brush it with butter. Lay out all the dough sheets in this way.
- Cut the baklava into diamonds with a knife. Put it in the oven at 180 degrees for 25 minutes.
- Drizzle with syrup. Let soak and cool for 2 hours.

Ingredients:
- Puff pastry without yeast - 500 g
- Nuts (any kind) - 200 g
- Sugar - 100 g + 100 g
- Butter - 60 g
- Honey - 1 tbsp
- Water - 100 ml
- Citric acid - a pinch
- Salt - a pinch
Method of preparation:
- Chop the nuts.
- Cut and roll out the dough to the required size.
- Spread the first layer and sprinkle with nuts. Repeat with all the dough sheets.
- Cut the baklava into diamonds and bake at 180 degrees for about 60 minutes.
- For the syrup, mix water, sugar, salt and citric acid in a saucepan. Add the honey. Cook until bubbles appear.
- Pour the syrup over the baklava. Let it soak and cool.
