Ingredients:

  • zucchini – 400 g
  • onions – 200 g
  • carrots – 200 g
  • tomato paste – 30 g
  • vegetable oil – 40 g
  • vinegar – 10 g
  • salt – 10 g
  • sugar – 20 g
  • ground black pepper – to taste

Method of preparation:

  1. Wash the vegetables and peel them, chop the onions, carrots, and zucchini as small as possible.
  2. Put all the vegetables in a saucepan, add oil, salt, sugar, pepper, and simmer over low heat for about 40-50 minutes to make the vegetables soft.
  3. At the very end, add vinegar and tomato paste, mix everything thoroughly, and turn off the heat.
  4. Use an immersion blender to whisk everything until smooth.
  5. Sterilize the jars and immediately put the hot zucchini caviar in.
  6. Preserve, turn the jars upside down, and cover with a warm cloth.
  7. When they are completely cool, put them in a dark, cool place.

How to cook delicious zucchini caviar

Ingredients:

  • Young zucchini – 2-3 pcs
  • Carrots – 1 pc
  • Onions – 1 pc
  • Garlic – 1-2 cloves
  • Vegetable oil – 3-4 tbsp
  • Tomato paste – 1 tbsp
  • Mayonnaise – 1 tbsp
  • Water – 100 ml
  • Salt – to taste
  • Pepper – to taste

Method of preparation:

  1. Wash and peel all vegetables, cut onions, and zucchini into cubes.
  2. Grate the carrots on a coarse grater.
  3. Heat a frying pan well, pour in vegetable oil, put the vegetables, fry, add water, and simmer for about 20 minutes.
  4. When the time is up, add mayonnaise, garlic, tomato paste, salt, and pepper, mix well, and turn off the heat.
  5. Blend the caviar with a blender, immediately pour into sterile jars, and preserve.
  6. Turn them upside down, cover them with a warm cloth, and let them cool completely.
  7. Then transfer to a cold, dark place.
