Ingredients:
- zucchini – 400 g
- onions – 200 g
- carrots – 200 g
- tomato paste – 30 g
- vegetable oil – 40 g
- vinegar – 10 g
- salt – 10 g
- sugar – 20 g
- ground black pepper – to taste
Method of preparation:
- Wash the vegetables and peel them, chop the onions, carrots, and zucchini as small as possible.
- Put all the vegetables in a saucepan, add oil, salt, sugar, pepper, and simmer over low heat for about 40-50 minutes to make the vegetables soft.
- At the very end, add vinegar and tomato paste, mix everything thoroughly, and turn off the heat.
- Use an immersion blender to whisk everything until smooth.
- Sterilize the jars and immediately put the hot zucchini caviar in.
- Preserve, turn the jars upside down, and cover with a warm cloth.
- When they are completely cool, put them in a dark, cool place.
2. Zucchini caviar for a quick meal
How to cook delicious zucchini caviar
Ingredients:
- Young zucchini – 2-3 pcs
- Carrots – 1 pc
- Onions – 1 pc
- Garlic – 1-2 cloves
- Vegetable oil – 3-4 tbsp
- Tomato paste – 1 tbsp
- Mayonnaise – 1 tbsp
- Water – 100 ml
- Salt – to taste
- Pepper – to taste
Method of preparation:
- Wash and peel all vegetables, cut onions, and zucchini into cubes.
- Grate the carrots on a coarse grater.
- Heat a frying pan well, pour in vegetable oil, put the vegetables, fry, add water, and simmer for about 20 minutes.
- When the time is up, add mayonnaise, garlic, tomato paste, salt, and pepper, mix well, and turn off the heat.
- Blend the caviar with a blender, immediately pour into sterile jars, and preserve.
- Turn them upside down, cover them with a warm cloth, and let them cool completely.
- Then transfer to a cold, dark place.
