Making delicious homemade mustard is not an easy task, as this process is quite painstaking and complicated. It's not enough to just choose good ingredients, you also need to combine them properly so that the sauce doesn't separate and become too runny.

James Oliver, an English chef, restaurateur, TV presenter, popularizer of home cooking and healthy eating, shared on his YouTube channel recipes for the most delicious homemade mustard, which takes only 15 minutes to prepare (to watch the video, scroll to the end).

To begin with, the main secret of excellent and tasty homemade mustard, according to Jamie Oliver, is to let the grains with spices brew for 24 hours to 3 days under cling film, and to use only natural ingredients.

1. Mustard with beer and malt vinegar

How to make delicious mustard at home

Ingredients:

  • malt vinegar - 85 ml
  • black mustard seeds - 115 g
  • yellow mustard seeds - 115 g
  • beer - 85 g
  • sea salt - 1 tbsp
  • liquid honey - 1 tbsp. l.

Method of preparation:

  1. Place the mustard seeds in a large bowl, pour in the beer, mix well, and cover with cling film. Leave it overnight.
  2. Afterward, rinse the seeds with water, transfer half of them to a blender, whisk well until smooth, add salt, vinegar, honey, and the rest of the whole grains, mix, and serve.

This mustard can be stored in the refrigerator, but only in sterile jars.

2. Mustard with egg yolks and white wine

Ingredients:

  • yellow mustard seeds - 100 g
  • champagne vinegar - 150 ml
  • white wine - 150 ml
  • fresh tarragon - 4-5 sprigs

Method of preparation:

  1. Pour mustard seeds into a small jar, add wine, vinegar, and salt, cover with cling film, and leave for 3 days.
  2. After that, transfer all the ingredients to a food processor, add tarragon, and blend until smooth. You can add a little water if the mixture is too thick.

You can store mustard for several days in the refrigerator, most importantly in a sterile jar.
