Homemade lavender ice cream: saves in the summer heat

Lavender is not only a beautiful flower with a pleasant aroma but also the basis for a delicious cool ice cream. The taste of this dessert is very fresh and light, and it is a great escape from the unbearable summer heat. And most importantly, this ice cream is very easy to make at home.

The idea of making homemade lavender ice cream was published on the Instagram page of the famous Ukrainian chef Andrii Kolisnyk (andreikolesnik).

Ingredients:

  • cream – 400 ml
  • milk – 500 ml
  • egg yolks – 7 pcs
  • sugar – 200 g
  • lavender – 10 g

Method of preparation:

1. Pour the milk, cream, and lavender into a saucepan and bring to a near boil.

2. At the same time, separate the yolks from the whites. Add sugar to the yolks and grind well until smooth.

3. When the milk mixture is ready, set it aside for 10 minutes to allow the lavender flavor to infuse it. But don't overdo it, because lavender can give off a bitterness that is not needed in ice cream.

4. Pour the milk mixture into the egg yolks/sugar mixture and stir constantly to prevent the eggs from boiling over. Then put everything on the fire.

5. Heat until the sugar has melted and be sure to stir to prevent egg lumps from forming.

6. When the ice cream base is ready, transfer it to a freezer container and leave it to cool at room temperature before putting it in the freezer.

7. Be sure to stir the ice cream every hour (or more often) so that it does not set in one piece and is free of ice crystals.
