Hearty zucchini cutlets: stay fresh for a long time
In the summer, zucchini cutlets are a great alternative to meat ones. The dish is quite dietary, moderately fatty, and, most importantly, quite budget-friendly. These cutlets stay fresh for several days, and you need very simple ingredients to prepare them.
The idea of making zucchini cutlets was published on the Instagram page of food blogger Viktoriia (vika_tasty).
Ingredients:
- medium-sized zucchini – 2 pcs
- carrots – 1 pc
- potatoes – 2 pcs
- semolina or flour – 2 tbsp
- garlic – 2 cloves
- herbs
- salt, pepper
Ingredients for the sauce:
- sour cream – 60 g
- mayonnaise – 60 g
- garlic – 2 cloves
- dill – 10 g
Method of preparation:
1. Finely grate carrots, potatoes, and zucchini, all separately.
2. Zucchini salt and let stand for 5-10 minutes.
3. Squeeze the zucchini and potatoes well from the liquid.
4. Combine all the ingredients in a bowl.
5. Season with pepper and salt, if necessary.
6. Once everything is mixed, squeeze the liquid again.
7. The cutlets should be dry, without excess liquid.
8. Form the patties and fry in vegetable oil on both sides.
9. Then transfer to a baking sheet and simmer in the oven for another 10-12 minutes at 180 degrees.
10. For the sauce, just mix everything.
11. Cutlets are delicious for 2-3 days.
