Quiche is a hearty French pie with chicken and mushrooms. It's just what you need for lunch. It is based on ordinary shortcrust pastry, which you can prepare in minutes.

Food blogger Anastasia (healthydemure) shared how to make a hearty quiche with chicken and mushrooms for lunch on her Instagram page. One piece will be enough to eat and not feel hungry.

Ingredients for the dough:

  • flour - 250 g
  • butter - 125 g
  • eggs - 1 pc.
  • salt - 1 tsp.
  • sugar - 2 tsp.
  • ice water - 40 ml.

Ingredients for the filling:

  • chicken fillet - 350 g
  • mushrooms - 250 g
  • onion - 50 g
  • butter - 30 g

Ingredients for the filling:

  • cottage cheese - 55 g
  • eggs - 2 pcs.
  • cream 15% - 100 ml.

Method of preparation:

1. Mix the flour with the butter.

2. Add the remaining ingredients and knead the dough.

3. Roll out the dough into a layer, and transfer to parchment.

4. Put into the mold, form the sides, and make punctures with a fork.

5. Fry onions, mushrooms, and chicken in butter.

6. Grate the cheese, add eggs and cream, and mix.

7. Add salt and spices.

8. Put the filling on the dough, add the filling, and bake in the oven at 180 degrees for 45 minutes.
