Hearty potato casserole with cheese for lunch: quick to prepare and very budget-friendly

Instead of mashed potatoes, you can make a delicious casserole for lunch. It is quite satisfying and does not require much of your time. The following amount of ingredients will make a large portion, enough for the whole family.

The idea of cooking a hearty potato casserole for lunch was published on the Instagram page of food blogger Anna Tymoshenko (anna timoshenko13). Tomatoes, onions, and a delicate sauce will add juiciness.

Ingredients:

  • potatoes - 7-8 pcs.
  • chicken fillet - 2 pcs.
  • onion - 1 pc.
  • tomatoes - 4 pcs.
  • eggs - 3 pcs.
  • cream - 250 ml.
  • mozzarella cheese - 150 g
  • salt, black pepper to taste

Method of preparation:

1. Peel the potatoes and cut them into slices.

2. Put half of them on a baking sheet and season with salt.

3. Cut the fillet into medium slices and place on the potatoes.

4. Then ring the onion, salt and tomatoes.

5. Finish with a layer of potatoes.

6. For the filling, mix eggs, cream, salt and pepper.

7. Pour over the casserole, cover with foil and bake for 40-50 minutes at 180 degrees.

8. Sprinkle with cheese 5 minutes before cooking and bake for another 7-10 minutes until golden brown.
