Green pasta: a spring dish that is perfect for lunch

Spring is a time of bright, rich colors and fresh, juicy vegetables. That's why you want to cook something beautiful, bright and delicious. Eating such dishes will fill your body up and improve your mood.

This is exactly what food blogger Olha Riabenko says. She shared a recipe for green pasta on Instagram. This dish is easy to prepare and ideal for lunch and dinner.

Ingredients:

  • Lettuce leaves - 70 gr
  • Spinach - 100 gr
  • Basil - 20 gr
  • Lemon - 1 pc
  • Pasta - 150 g
  • Olive oil - 100 ml
  • Parmesan cheese - 50 g
  • Mozzarella or burrata cheese
  • Salt
  • Pepper
  • Dried tomatoes

Method of preparation:

1. Boil the pasta in salted water.

2. Put the greens in boiling water for 1 minute and transfer to a blender. You can use any greens, but spinach will give the pasta the best color.

3. Add the oil, and Parmesan, grate the lemon zest, and beat until smooth.

4. Pour the green mass into the pan with the pasta and mix.

5. Serve the pasta with lemon juice, dried tomatoes, and fresh pepper. Put cheese on top.
