Golden zrazy with filling: how to make the perfect potato dough
Potato zrazy are special pies made from potato dough, for which even yesterday's mashed potatoes are suitable. The filling for zrazy can be different: minced meat, mushrooms, meat, cabbage and even offal. The main thing in the dish is to make a good dough.
Food blogger Tetiana (_tanyushina_) shared a recipe for potato zrazy with mushrooms and cheese on her Instagram page .
Ingredients:
- potatoes - 1 kg
- eggs - 1 pc
- flour - 2-3 tbsp
- salt, pepper, dried garlic
Filling:
- mushrooms - 500 g
- suluguni cheese - 150 g
Method of preparation:
1. Peel the potatoes, cover with water, salt and boil until tender.
2. Drain the cooked potatoes, put them in a bowl and mash them. Leave to cool to room temperature.
3. When the mashed potatoes have cooled, add the egg, salt, pepper, and dried garlic. Stir to combine.
4. Add the flour and mix again. The resulting dough is homogeneous and easy to work with.
5. To prepare the filling, chop the mushrooms and fry until golden brown. Season with salt and pepper. When cool, add grated cheese.
6. Sprinkle the work surface with flour. Divide the dough into equal parts. Form potato patties with the filling.
7. Fry the finished zrazy over medium heat.
