Eggplants can be a great alternative to potatoes. They are much healthier and quite affordable right now. They can be fried deliciously in a frying pan. The vegetable is very crispy and juicy.

The idea of cooking fried eggplant was published on the Instagram page of the famous chef Volodymyr Yaroslavskyi (yaroslavskyi_vova).

Ingredients:

  • eggplant – 2 pcs.
  • a mixture of cornstarch and flour – 50/50
  • oil for frying
  • a little bell pepper
  • cilantro greens
  • salt
  • chili sauce – 200 g
  • a little soy sauce, fish sauce – optional

Method of preparation:

1. Peel the eggplant, cut it into long strips and salt.

2. Let stand for half an hour.

3. Squeeze out the excess moisture (bitterness will come out with it).

4. Sprinkle the eggplant strips on both sides with a mixture of flour and starch, but not too thickly.

5. Pour the frying oil into the frying pan with a layer of about 3 fingers.

6. Fry the eggplants, and put them on a paper napkin to absorb the excess fat.

7. Add chili sauce, a few tablespoons of water, eggplant, soy sauce, chopped bell pepper, and a few drops of fish sauce to the pan and bring to a boil, cook for a few minutes.

8. Add lots of herbs.
