How to choose figs for jam:

  • the fruits should not be green, but as ripe and whole as possible
  • be sure to cut off the tails before cooking
  • cook fig jam over moderate heat and be sure to remove the peel, it accumulates harmful substances
  • add a little lemon juice – this will give it a delicate flavor

Recipe for honey fig jam

Ingredients:

  • figs - 1 kg
  • water - 400 ml
  • sugar - 800 g
  • lemon - 1/2 pc.

Method of preparation:

  1. Choose fruits of the same size, wash them well under running water, and be sure to peel them.
  2. Put them in a large bowl, cover it with sugar, and leave them overnight.
  3. Syrup: add the remaining sugar and water, and mix well.
  4. Pour this syrup over the figs and cook over moderate heat, chop the lemon and add it to the jam.
  5. Cook the jam until it becomes honeyed, making sure to remove the foam.
  6. Prepare the jars in advance, pour the hot jam, and preserve it immediately, be sure to turn the jars upside down.
