Quiche is a shortcrust pastry with a salty filling. Most often, a lot of chicken and mushrooms are put inside. It turns out to be a very satisfying and nutritious lunch dish that takes a minimum of time to prepare.

Food blogger Olha Holovina (olha.holovina) shared how to make a delicious chicken and mushroom quiche for a hearty lunch on Instagram. The filling inside is very juicy.

Ingredients for the dough:

  • flour - 350 g
  • butter - 180 g
  • eggs - 2 pcs.
  • a pinch of salt

Ingredients for the filling:

  • smoked chicken fillet - 150 g
  • ham - 150 g
  • broccoli (can be frozen) - 200 g
  • mushrooms - 150-200 g
  • onion - 1 medium
  • salt and pepper

Ingredients for the filling:

  • eggs - 2 pcs.
  • milk - 130 ml.
  • cream 20% - 200 ml.
  • salt, pepper, dried garlic - to taste
  • hard cheese - 150-180 g

Method of preparation:

1. For the dough, take the butter out of the refrigerator in advance and cut it into cubes.

2. Leave it at room temperature for a while.

3. Mix flour, eggs, salt, add butter.

4. Knead the dough.

5. Leave in the refrigerator for 15 minutes (this is optional, but makes it easier to work with the dough).

6. Dice the mushrooms and onions for the filling.

7. Fry for 10 minutes over low heat.

8. Add broccoli, cook for another 7-8 minutes.

9. Dice the smoked fillet and ham.

10. Mix with mushrooms, onions and broccoli, salt and pepper to taste.

11. For the filling, beat eggs, milk and cream with a whisk, add spices to taste.

12. Roll out the dough 3-5 mm thick.

13. Transfer to a baking dish covered with parchment and form the sides.

14. Prick the bottom or fill it with cereal (so that it does not rise).

15. Bake for 25-30 minutes at 180 degrees.

16. Take out the mold, put the filling and pour the egg-milk mixture over it.

17. Bake for 25 minutes, sprinkle with cheese and bake for another 10-15 minutes.

18. Eat cold.
