Eggplant with cheese and egg is a perfect breakfast dish. First, it cooks quite quickly and does not require much effort. And secondly, its taste will be perfect and extremely interesting, because an unusual combination of products is used to prepare the dish.

Food blogger Anna Teres shared her recipe for eggplant with cheese and egg on Instagram. The dish is quite budget-friendly, but so tasty that even children will love it.

Ingredients

  • Eggplant – 2 pcs
  • Egg yolks – 4 pcs
  • Tomato sauce – 4 tbsp
  • Mozzarella – 75 gr
  • Cherry tomatoes
  • Oregano
  • Parsley
  • Oil and parsley
  • Salt

Method of preparation.

1. Cut the eggplant in half lengthwise. Season with salt and a little oil.

2. Bake them cut side down on a parchment for 30 minutes at 240ºC.

3. Chop the eggplant flesh and mix it with the tomato paste.

4. Spread on the eggplant and add the grated mozzarella.

5. Lay out the cherry tomato halves.

6. Make small indentations and add the egg yolk.

7. Put in the oven for 5 minutes at 220º C.

8. Sprinkle with chopped parsley and serve hot.
