Eggplant rolls with a delicious filling: a recipe for a budget appetizer in 10 minutes

Ingredients:
- 2 medium eggplants
- 70 g of walnuts
- 1 clove of garlic
- a small bunch of parsley
- salt to taste
- oil for frying
Method of preparation:
1. Cut off the tails of the eggplant and cut into thin slices. Put them in a bowl, season with salt, and leave for 30 minutes.
2. Heat a frying pan with a little oil. Pat the eggplants dry with a paper towel and fry on both sides until golden brown. Place the eggplants on a paper towel.
4. For the filling: grind the nuts, garlic, and parsley in a blender. Taste the finished filling and add salt if desired.
5. Put 1 tsp of the filling on the eggplant and roll it up. Repeat with all the eggplants and filling.
