Eggplant casserole with cheese in the oven: a recipe for the most delicate dish
Eggplant season is starting in many markets. These vegetables are baked in the oven, fried in a pan, stewed, added to salads, and canned for the winter. If you're looking for a light lunch or dinner dish, an eggplant casserole with cheese will be the perfect option.
Food blogger Yanina Lazarenko (yanika.lazarenko) shared a recipe for a delicious eggplant casserole on her Instagram page.
Ingredients:
- eggplant - 1 large or 2 medium eggplants
- onion - 1 pc
- garlic - 3-4 cloves
- tomatoes - 6 pcs
- Suluguni cheese - 200 g
- oregano
Method of preparation:
1. Cut the eggplant in half and then into thin slices. Season with salt and leave for 20 minutes.
2. Make cuts in the tomatoes, pour boiling water over them, and leave for 10 minutes. Then peel the tomatoes.
3. Chop the onion, tomatoes and garlic.
4. Fry the onion until transparent, then add the garlic and tomatoes. Simmer for 30 minutes over low heat. Add oregano and spices.
5. Fry the eggplants separately until golden brown and remove excess fat with a paper towel.
6. Put the casserole in the mold as follows: sauce, eggplant, sauce, grated cheese, eggplant, sauce, cheese.
7. Bake at 180 degrees for 30 minutes under foil, then another 10 minutes without foil.
